Description
A creamy, rich chicken pasta dish featuring tender chicken breasts, sun-dried tomatoes, and parmesan cheese, perfectly suited for an impressive yet quick date night dinner in just 30 minutes.
Ingredients
Chicken
- 2 chicken breasts, sliced
- 2 tbsp olive oil
- Salt and pepper to taste
Sauce
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated parmesan
- 1 tsp Italian seasoning
Pasta
- 250 g pasta (penne or fettuccine recommended)
Garnish
- Fresh basil for garnish
Instructions
- Cook the pasta: Fill a large pot with water, bring it to a boil, add salt, and cook the pasta according to package instructions until al dente. Drain and set aside.
- Season and cook chicken: Pat the chicken breasts dry, season them generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat and cook the chicken until golden brown and cooked through, about 5-7 minutes per side depending on thickness. Remove chicken from skillet and set aside.
- Sauté garlic and sun-dried tomatoes: In the same skillet, reduce heat to medium, add minced garlic and sun-dried tomatoes, sauté until fragrant and tomatoes soften, about 2-3 minutes.
- Prepare the sauce: Pour in the heavy cream and chicken broth, stirring to combine. Add grated parmesan and Italian seasoning. Let the sauce simmer gently until it thickens slightly, about 5 minutes.
- Combine chicken and sauce: Return the cooked chicken to the skillet and coat it thoroughly with the creamy sauce, warming it through for an additional 2-3 minutes.
- Toss pasta with sauce: Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the creamy sauce and chicken is evenly distributed.
- Garnish and serve: Remove from heat, garnish with fresh basil leaves, and serve immediately for a delicious, comforting date night meal.
Notes
- Use penne or fettuccine for the best pasta texture in this dish.
- Add chili flakes if you prefer a spicy kick to balance the creaminess.
