Description
This air fryer meatloaf is tender, flavorful, and topped with a sweet and tangy glaze. It cooks in half the time of oven-baked meatloaf, making it perfect for busy weeknights!
Ingredients
For the Meatloaf
- 1 1/2 lbs ground beef (or mix of beef & pork)
- 1 cup breadcrumbs (or crushed Ritz crackers)
- 1/2 cup milk
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 large eggs, beaten
- 2 tablespoons ketchup
- 1 teaspoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried parsley
- 1/2 teaspoon smoked paprika
For the Glaze
- 1/3 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon Dijon mustard (optional)
Instructions
- Preheat air fryer to 380°F (193°C) for 5 minutes. In a large bowl, combine ground beef, breadcrumbs, milk, onion, garlic, eggs, ketchup, Worcestershire, salt, pepper, parsley, and paprika. Mix until just combined (don’t overmix).
- Shape mixture into a loaf (about 7×4 inches) and place it on parchment paper or in a lightly greased air fryer basket.
- Air fry at 380°F for 25 minutes.
- Meanwhile, whisk together glaze ingredients.
- After 25 minutes, spread glaze over meatloaf and air fry for another 8–10 minutes, until internal temperature reaches 160°F (71°C).
- Let rest 5–10 minutes before slicing.
Notes
- Cook time may vary slightly depending on air fryer size/model.
- Make two mini loaves for faster cooking and crispier edges.
- Leftovers make great meatloaf sandwiches.
- Can be frozen baked or unbaked—wrap tightly and freeze up to 3 months.
