Description

A simple and convenient air fryer meal featuring tender, flavorful roast beef paired with crispy baby potatoes. This easy recipe cooks both the beef and potatoes together in one appliance, making for a delicious and complete dinner that’s ready in under an hour.

Ingredients

Beef Roast

  • 2 lb beef roast (sirloin, chuck, or round)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp dried thyme

Potatoes

  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • pinch of salt

Instructions

  1. Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) to ensure it reaches the right temperature for roasting the beef and potatoes evenly.
  2. Season Roast: In a small bowl, mix the salt, pepper, garlic powder, and dried thyme. Rub this seasoning mixture all over the beef roast thoroughly to coat it for maximum flavor.
  3. Prepare Potatoes: In a separate bowl, toss the halved baby potatoes with olive oil and a pinch of salt until they are evenly coated.
  4. Cook Beef Roast: Place the seasoned roast into the air fryer basket and cook for 25 minutes at 375°F, allowing the beef to begin roasting.
  5. Add Potatoes: After 25 minutes, carefully arrange the seasoned potatoes around the roast inside the air fryer basket. Continue cooking for an additional 15 to 20 minutes, or until the potatoes are golden and crispy and the roast reaches your desired doneness.
  6. Rest and Serve: Remove the roast from the air fryer and let it rest for about 10 minutes to allow the juices to redistribute. Then slice against the grain and serve alongside the crispy baby potatoes.

Notes

  • Adjust cooking time based on thickness of the roast for perfect doneness.
  • Shake or toss the potatoes halfway through cooking to ensure even crispiness.
  • Letting the roast rest before slicing helps retain its moisture and flavor.
