Description

This Autumn Harvest Chicken Skillet is a cozy, one-pan dinner featuring tender seared chicken breasts, roasted sweet potatoes, crisp apples, and sautéed Brussels sprouts all coated in a savory maple Dijon glaze. It’s a perfect balance of sweet and savory fall flavors, made quickly in under 40 minutes for an easy and hearty meal.

Ingredients

Chicken & Seasoning

  • 2 tbsp olive oil
  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste

Vegetables & Fruits

  • 1 sweet potato, peeled and diced
  • 1 apple, cored and sliced (Honeycrisp or Fuji works well)
  • ½ red onion, sliced
  • 1 cup Brussels sprouts, halved

Glaze & Herbs

  • 2 tbsp butter
  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 tsp fresh rosemary (or ½ tsp dried)
  • ½ cup low-sodium chicken broth

Instructions

  1. Season & Sear Chicken: Season the chicken breasts generously with salt and black pepper. Heat the olive oil in a large skillet over medium-high heat. Sear each chicken breast for 4 to 5 minutes on each side, until the outside is golden brown. Remove the chicken from the skillet and set aside.
  2. Cook Vegetables: In the same skillet, add the butter along with the diced sweet potato, sliced red onion, and halved Brussels sprouts. Sauté the vegetables for 6 to 8 minutes, stirring occasionally, until they start to soften but still retain some bite.
  3. Add Apples & Glaze: Stir in the sliced apple, maple syrup, Dijon mustard, fresh thyme, and rosemary. Cook this mixture for 2 to 3 minutes, allowing the glaze to evenly coat the vegetables and apples and infuse them with flavor.
  4. Combine & Simmer: Return the seared chicken breasts to the skillet, nestling them among the vegetables and apples. Pour in the low-sodium chicken broth, then cover the skillet with a lid. Reduce the heat to low and simmer for 10 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. Serve: Spoon the luscious maple-Dijon glaze over the chicken and vegetables before serving. Garnish with additional fresh herbs if desired for an extra flavorful touch.

Notes

  • Substitute chicken thighs for a richer, juicier flavor.
  • Add a pinch of cinnamon or nutmeg to the glaze for extra autumn warmth.
  • Pairs beautifully with wild rice or quinoa for a complete meal.
  • For a dairy-free version, omit the butter or replace it with coconut oil.
