  • 4 large potatoes, peeled and cubed
  • 4 slices bacon, chopped
  • 1 onion, diced

  • 2 tbsp flour
  • Salt & pepper to taste
  • Green onions for garnish


Instructions

  1. Cook Bacon: In a large pot, cook the chopped bacon over medium heat until it becomes crisp. Remove the bacon pieces and set them aside, leaving the bacon drippings in the pot.
  2. Sauté Onion: Add the diced onion to the bacon drippings and sauté until the onion is soft and translucent, about 5 minutes.
  3. Create Roux: Stir in the butter and flour to the pot with the onions and cook for one minute, stirring constantly to form a roux and eliminate the raw flour taste.
  4. Add Broth and Potatoes: Gradually whisk in the chicken broth, then add the cubed potatoes. Bring the soup to a simmer and cook until the potatoes are tender, about 15-20 minutes, stirring occasionally.
  5. Add Dairy and Cheese: Stir in the milk or cream, shredded cheddar cheese, salt, and pepper. Continue cooking gently until the cheese is melted and the soup is heated through, making it rich and creamy.
  6. Serve with Toppings: Ladle the soup into bowls and garnish with the crispy bacon pieces and sliced green onions before serving for added flavor and texture.
