Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

16 oz full-fat cream cheese, softened

1 cup granulated sugar

3 ripe bananas, mashed

1 cup heavy whipping cream


Instructions

  1. Preheat your oven to 350°F (175°C). In a medium-sized bowl, mix graham cracker crumbs and melted butter. Press this mixture into the base of a springform pan to form the crust.
  2. In a separate large bowl, beat the softened cream cheese until smooth. Gradually add in the sugar and continue mixing until fully incorporated.
  3. Fold in the mashed bananas to the cream cheese mixture, creating a smooth, banana-infused filling.
  4. Pour the banana cream filling over the prepared crust and bake in the oven for 40-45 minutes, or until the center of the cheesecake is set.
  5. Once done, allow the cheesecake to cool at room temperature before refrigerating it for at least 4 hours, or ideally overnight.
  6. Whip the heavy cream in a separate bowl until soft peaks form. Gently fold the whipped cream into the cooled cheesecake filling to lighten it up.
