Description

Soft, moist banana muffins made with ripe bananas — perfect for breakfast, snacks, or lunchboxes. These easy-to-make muffins combine the sweetness of ripe bananas with a tender crumb, making them a delightful treat for any time of day.

Ingredients

Banana Muffins Ingredients

  • 3 ripe bananas, mashed
  • ½ cup melted butter or oil
  • ½ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt

Instructions

  1. Preheat Oven. Preheat your oven to 350°F (175°C) to prepare for baking the muffins.
  2. Mix Wet Ingredients. In a large bowl, combine the mashed ripe bananas with melted butter or oil, sugar, eggs, and vanilla extract. Mix thoroughly until the ingredients are well incorporated.
  3. Add Dry Ingredients. Gradually stir in the flour, baking soda, and salt into the wet mixture. Mix gently to combine, being careful not to overmix to keep the muffins tender.
  4. Prepare Muffin Tin. Line a muffin tin with paper liners or lightly grease it. Spoon the batter into the prepared muffin cups, filling each about two-thirds full to allow room for rising.
  5. Bake Muffins. Place the muffin tin in the preheated oven and bake for 18–22 minutes, or until the muffins are set and a toothpick inserted into the center comes out clean.
  6. Cool and Serve. Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.

Notes

  • Add chocolate chips or walnuts for a delicious twist and extra texture.
  • Use very ripe bananas for the best sweet flavor and moist texture.
  • You can substitute melted butter with an equal amount of neutral oil for a dairy-free option.
  • Store muffins in an airtight container to keep them fresh for several days.
