- 1 teaspoon Italian seasoning
- 1/2 cup tomato sauce
- 1 tablespoon olive oil
Cauliflower & Topping
- 2 cups cauliflower rice

- 2 tablespoons chopped parsley (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the casserole later.
- Sauté Onions: Heat olive oil in a skillet over medium heat, then add diced onion and cook for 3–4 minutes until softened and translucent.
- Add Garlic: Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Cook Ground Beef: Add ground beef to the skillet; cook thoroughly until browned and no longer pink, draining any excess fat if necessary for a leaner dish.

- Add Cauliflower Rice: Incorporate the cauliflower rice into the skillet and cook for 3–4 minutes until it becomes slightly tender but not mushy.
- Transfer to Baking Dish: Move the entire mixture into a prepared baking dish, spreading it out evenly.
- Add Cheese: Sprinkle shredded cheddar cheese evenly over the top of the beef and cauliflower mixture.
- Bake: Place the baking dish in the preheated oven and bake for 15–20 minutes until the cheese has melted and is bubbly and golden in spots.
- Garnish and Serve: Remove from oven, sprinkle with chopped parsley if desired, and serve hot for a comforting, low-carb meal.
