Ingredients

Meat and Sauce

  • 1½ cups marinara sauce

  • Salt & pepper, to taste

Vegetables

  • 1 large eggplant, sliced
  • 2 tbsp olive oil

Cheese

  • 1 cup shredded mozzarella cheese
  • ½ cup parmesan cheese


Instructions

  1. Preheat oven: Set your oven to 375°F (190°C) to prepare for roasting the eggplant and baking the casserole.
  2. Roast eggplant slices: Brush the sliced eggplant generously with olive oil to prevent sticking and enhance flavor. Arrange them on a baking sheet and roast in the preheated oven for 15 minutes until tender and slightly golden.
  3. Brown the beef: While the eggplant roasts, heat a skillet over medium heat. Add the ground beef, seasoning with garlic powder, salt, and pepper. Cook until the beef is fully browned and cooked through. Drain any excess fat.
  4. Assemble the casserole: In a baking dish, layer half of the roasted eggplant slices evenly. Spread half of the browned beef over the eggplant, followed by half of the marinara sauce. Repeat these layers once more to use all the ingredients.
  5. Add cheeses on top: Evenly sprinkle the shredded mozzarella and parmesan cheeses over the top layer of sauce to create a rich, bubbly crust as it bakes.
  6. Bake the casserole: Place the assembled dish in the oven and bake for 25 to 30 minutes until the cheese is melted, golden, and the casserole is bubbling around the edges.
