Instructions
- Preheat oven: Set your oven to 375°F (190°C) to prepare for roasting the eggplant and baking the casserole.
- Roast eggplant slices: Brush the sliced eggplant generously with olive oil to prevent sticking and enhance flavor. Arrange them on a baking sheet and roast in the preheated oven for 15 minutes until tender and slightly golden.
