Instructions

  1. Brown the beef and onions. In a large skillet over medium heat, cook the ground beef and diced onion together until the beef is browned and fully cooked. Drain any excess fat to prevent greasiness.
  2. Add rice, tomatoes, broth, and seasoning. Stir in the uncooked rice (or cauliflower rice), canned diced tomatoes with green chiles, beef broth, and taco seasoning packet. Mix all ingredients thoroughly.
  3. Simmer covered. Cover the skillet with a lid and reduce heat to low. Let it simmer for 15 to 20 minutes, or until the rice is tender and has absorbed most of the liquid.
  4. Stir in cheese. Remove the lid and stir in the shredded cheddar or Mexican cheese blend until it melts completely creating a creamy texture.
  5. Add toppings and serve. Garnish with optional toppings such as chopped cilantro, sour cream, or sliced avocado to enhance flavor and presentation. Serve hot.

  • Use cauliflower rice instead of regular rice for a low-carb version; reduce beef broth to 1 cup in this case to avoid excessive moisture.
