Instructions
- Brown the beef and onions. In a large skillet over medium heat, cook the ground beef and diced onion together until the beef is browned and fully cooked. Drain any excess fat to prevent greasiness.
- Add rice, tomatoes, broth, and seasoning. Stir in the uncooked rice (or cauliflower rice), canned diced tomatoes with green chiles, beef broth, and taco seasoning packet. Mix all ingredients thoroughly.
- Simmer covered. Cover the skillet with a lid and reduce heat to low. Let it simmer for 15 to 20 minutes, or until the rice is tender and has absorbed most of the liquid.
- Stir in cheese. Remove the lid and stir in the shredded cheddar or Mexican cheese blend until it melts completely creating a creamy texture.
- Add toppings and serve. Garnish with optional toppings such as chopped cilantro, sour cream, or sliced avocado to enhance flavor and presentation. Serve hot.

- Use cauliflower rice instead of regular rice for a low-carb version; reduce beef broth to 1 cup in this case to avoid excessive moisture.
- Add diced bell peppers or corn for additional texture and sweetness.
