Ingredients
Soup Ingredients
- 2 cans white beans, drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 teaspoon rosemary
- 1 teaspoon thyme
- 1 cup spinach or kale (optional)
- Salt and pepper to taste
Instructions
- Sauté Onion and Garlic: Heat a large pot over medium heat and sauté the chopped onion and minced garlic for about 3 minutes until fragrant and translucent.
- Add Beans, Broth, and Herbs: Stir in the drained white beans, broth, rosemary, thyme, salt, and pepper. Mix well to combine all ingredients.
- Simmer the Soup: Bring the soup to a gentle simmer and cook for 15 to 20 minutes, allowing the flavors to meld together.
- Add Greens: In the last 5 minutes of cooking, add the spinach or kale to the pot and stir until the greens are wilted and tender.
- Serve Warm: Remove from heat and serve the soup warm, optionally adding parmesan cheese or crusty bread on the side for extra flavor and texture.
Notes
- For a creamier texture, partially blend the soup using an immersion blender or transfer a portion to a blender and then mix back in.
- Adding a sprinkle of parmesan cheese or serving with crusty bread enhances the flavor and makes the soup more filling.
