Description

Bistek Tagalog, or Filipino Beef Steak, is a savory dish made with marinated beef tenderloin, calamansi juice, soy sauce, garlic, and onions, delivering a flavorful and tangy meal perfect for family dinners.


Ingredients

750 grams beef tenderloin

3 tablespoons soy sauce

2 tablespoons calamansi juice

1/2 teaspoon pepper

1/2 teaspoon garlic powder

Lots of onions, chopped into rings

3 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon calamansi juice

1 tablespoon sugar (optional)

1/2 cup water

Cooking oil for searing


Instructions

  1. Slice the beef into thin pieces. Pound each slice with a meat tenderizer to ensure it cooks quickly and becomes tender. Marinate the beef with soy sauce, calamansi juice, pepper, and garlic powder. Let it marinate for at least 1 hour.
  2. Heat some cooking oil in a pan and sear the beef until it turns brown. Once browned, discard any excess liquid and return it to the reserved marinade.
  3. In the same pan, sauté garlic and 1/4 of the onions until fragrant. Add the reserved marinade and let it simmer, then add the water, soy sauce, sugar (optional), and pepper.
  4. Add the seared beef into the pan and cover. Let it cook for 2-3 minutes. If using tougher cuts, cook longer until tender.
  5. After 3 minutes, add additional calamansi juice and the remaining onion rings. Cover and cook for 1 more minute. Add extra onions for crispiness, if desired.
  6. Serve the Bistek Tagalog hot with steamed rice.

Notes

  • For an alternative to calamansi, use fresh lemon or lime juice.
  • Sweetness can be adjusted by varying the sugar. Skip the sugar for a less sweet dish.
  • This dish can be made ahead and stored in the refrigerator for up to 2-3 days.
  • If you like crispy onions, cook them separately in oil before adding to the dish.
