Ingredients
1 large head cauliflower, cut into florets
½ cup all-purpose flour
½ cup water
2 teaspoons garlic powder
1 teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
Cooking spray
½ cup hot sauce
2 tablespoons butter, melted
½ tablespoon lemon juice
Ranch or blue cheese dressing for serving
Carrots and celery sticks for serving
Instructions
- Preheat the oven to 450°F (232°C). Grease a baking sheet with cooking spray or line it with parchment paper.
- In a large bowl, whisk together the flour, water, garlic powder, paprika, salt, and pepper until smooth.
- Add the cauliflower florets to the batter and toss to coat evenly.
- Spread the coated cauliflower in a single layer on the prepared baking sheet, ensuring there’s space between each piece.
- Bake in the preheated oven for 20-25 minutes, flipping the cauliflower halfway through to ensure even browning.
- While the cauliflower bakes, prepare the buffalo sauce by mixing the hot sauce, melted butter, and lemon juice in a small bowl.
- Once the cauliflower is golden and crispy, brush the buffalo sauce generously over the florets.
- Return the cauliflower to the oven and bake for an additional 15 minutes, allowing the sauce to caramelize and the bites to become extra crispy.
- Serve hot with ranch or blue cheese dressing, along with carrots and celery sticks if desired.

- For a gluten-free version, use almond flour or cornstarch instead of all-purpose flour.
