Description

Ingredients

1 large head cauliflower, cut into florets

½ cup all-purpose flour

½ cup water

2 teaspoons garlic powder

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

Cooking spray

½ cup hot sauce

2 tablespoons butter, melted

½ tablespoon lemon juice

Ranch or blue cheese dressing for serving

Carrots and celery sticks for serving


Instructions

  1. Preheat the oven to 450°F (232°C). Grease a baking sheet with cooking spray or line it with parchment paper.
  2. In a large bowl, whisk together the flour, water, garlic powder, paprika, salt, and pepper until smooth.
  3. Add the cauliflower florets to the batter and toss to coat evenly.
  4. Spread the coated cauliflower in a single layer on the prepared baking sheet, ensuring there’s space between each piece.
  5. Bake in the preheated oven for 20-25 minutes, flipping the cauliflower halfway through to ensure even browning.
  6. While the cauliflower bakes, prepare the buffalo sauce by mixing the hot sauce, melted butter, and lemon juice in a small bowl.
  7. Once the cauliflower is golden and crispy, brush the buffalo sauce generously over the florets.
  8. Return the cauliflower to the oven and bake for an additional 15 minutes, allowing the sauce to caramelize and the bites to become extra crispy.
  9. Serve hot with ranch or blue cheese dressing, along with carrots and celery sticks if desired.

  • For a gluten-free version, use almond flour or cornstarch instead of all-purpose flour.
