Description

Cajun Turkey Stuffed Sweet Potatoes are a healthy and flavorful meal combining leftover turkey, sautéed mushrooms, and a creamy Cajun sauce all served on a sweet potato base. Perfect for a quick, satisfying, and nutritious meal, it’s easily made Paleo and Whole30 compliant.

Ingredients

2 large sweet potatoes, cooked whole in the microwave, oven, or crock pot

1 cup cooked/leftover turkey, chopped

2 cups mushrooms, sliced (button, crimini, or baby bella)

½ cup mayo

¼ cup non-dairy milk (plain and unsweetened)

2 tsp Cajun seasoning

¼ cup scallions/green onions for garnish, sliced thinly

Instructions

  1. Prepare the mushrooms: Heat a skillet to medium heat. Add the sliced mushrooms and sauté until softened, about 10 minutes. Remove and set aside.
  2. Cook the turkey: Add the chopped turkey to the pan and cook for 5 minutes, or until warmed and slightly browned. Remove and set aside.
  3. Prepare the sweet potatoes: Cut the cooked sweet potatoes in half and fluff the insides with a fork.
  4. Assemble: Top the sweet potatoes with the turkey, sautéed mushrooms, a drizzle of the creamy Cajun sauce, and garnish with fresh scallions.

Notes

  • Spicy Version: Add extra Cajun seasoning or hot sauce to the creamy sauce for more heat.
  • Non-dairy Options: Use plant-based mayo and milk for Paleo or Whole30 diets.
  • Vegetable Substitutes: Swap mushrooms for vegetables like spinach, bell peppers, or zucchini.
  • Roasting Sweet Potatoes: For added flavor, roast sweet potatoes instead of microwaving or using a crockpot.
