Ingredients
2 large sweet potatoes, cooked whole in the microwave, oven, or crock pot
1 cup cooked/leftover turkey, chopped
2 cups mushrooms, sliced (button, crimini, or baby bella)
½ cup mayo
¼ cup non-dairy milk (plain and unsweetened)
2 tsp Cajun seasoning
¼ cup scallions/green onions for garnish, sliced thinly
Instructions
- Prepare the mushrooms: Heat a skillet to medium heat. Add the sliced mushrooms and sauté until softened, about 10 minutes. Remove and set aside.
- Cook the turkey: Add the chopped turkey to the pan and cook for 5 minutes, or until warmed and slightly browned. Remove and set aside.
- Prepare the sweet potatoes: Cut the cooked sweet potatoes in half and fluff the insides with a fork.
- Assemble: Top the sweet potatoes with the turkey, sautéed mushrooms, a drizzle of the creamy Cajun sauce, and garnish with fresh scallions.
