Description
A creamy and flavorful white chicken chili featuring tender shredded chicken, white beans, and a blend of Cajun spices, finished with a rich touch of heavy cream for a comforting and slightly spicy meal that’s perfect for chilly days.
Ingredients
Main Ingredients
- 2 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups cooked shredded chicken
- 2 cans white beans, drained and rinsed
- 3 cups chicken broth
- 1 cup heavy cream
- 1 tbsp Cajun seasoning
- 1/2 tsp paprika
- Salt and pepper to taste
Garnish
- Fresh cilantro for garnish
Instructions
- Sauté Onion: Heat the olive oil in a pot over medium heat. Add the chopped onion and cook until it becomes soft and translucent, about 4-5 minutes.
- Add Garlic: Stir in the minced garlic and cook for an additional 1 minute to release its aroma without burning it.
- Add Main Ingredients: Mix in the cooked shredded chicken, drained and rinsed white beans, chicken broth, Cajun seasoning, paprika, and salt and pepper to taste. Stir well to combine all the flavors.
- Simmer: Reduce the heat to low and let the chili simmer gently for 15–20 minutes, allowing the spices to infuse and the flavors to meld together.
- Finish with Cream: Stir in the heavy cream and heat through for another 2-3 minutes, ensuring the chili is warm and creamy without boiling.
- Garnish and Serve: Remove from heat, garnish with fresh cilantro leaves, and serve the chili hot for a comforting meal.
Notes
- Adjust the amount of Cajun seasoning to control the spice level according to your preference.
- Add corn kernels for extra sweetness and texture variation in the chili.
