Description

A creamy and flavorful white chicken chili featuring tender shredded chicken, white beans, and a blend of Cajun spices, finished with a rich touch of heavy cream for a comforting and slightly spicy meal that’s perfect for chilly days.

Ingredients

Main Ingredients

  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups cooked shredded chicken
  • 2 cans white beans, drained and rinsed
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 tbsp Cajun seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste

Garnish

  • Fresh cilantro for garnish

Instructions

  1. Sauté Onion: Heat the olive oil in a pot over medium heat. Add the chopped onion and cook until it becomes soft and translucent, about 4-5 minutes.
  2. Add Garlic: Stir in the minced garlic and cook for an additional 1 minute to release its aroma without burning it.
  3. Add Main Ingredients: Mix in the cooked shredded chicken, drained and rinsed white beans, chicken broth, Cajun seasoning, paprika, and salt and pepper to taste. Stir well to combine all the flavors.
  4. Simmer: Reduce the heat to low and let the chili simmer gently for 15–20 minutes, allowing the spices to infuse and the flavors to meld together.
  5. Finish with Cream: Stir in the heavy cream and heat through for another 2-3 minutes, ensuring the chili is warm and creamy without boiling.
  6. Garnish and Serve: Remove from heat, garnish with fresh cilantro leaves, and serve the chili hot for a comforting meal.

Notes

  • Adjust the amount of Cajun seasoning to control the spice level according to your preference.
  • Add corn kernels for extra sweetness and texture variation in the chili.
