  • 1 tbsp olive oil
  • Salt & pepper to taste

Toppings

  • 1 cup cherry tomatoes, halved
  • 4 slices fresh mozzarella
  • Fresh basil leaves (about 8-12 leaves)
  • 2 tbsp balsamic glaze


Instructions

  1. Season the chicken. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper to your taste to enhance the flavor of the meat.
  2. Cook the chicken. Heat the olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook for about 5-7 minutes per side until they are cooked through and reach an internal temperature of 165°F (74°C).
  3. Add tomatoes and mozzarella. Place the cherry tomato halves evenly over each chicken breast, then top each with a slice of fresh mozzarella cheese.
