Ingredients

6 oz cream cheese (room temperature)
3 tablespoons granulated sugar
1 teaspoon vanilla extract
Cookie Dough:
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
1 cup unsalted butter (melted and cooled)
1 cup light brown sugar (packed)
½ cup granulated sugar
1 cup fresh carrots (finely grated)
1 teaspoon vanilla extract
2 large egg yolks (room temperature)
Instructions
Prepare the Cream Cheese Filling: In a medium bowl, beat together cream cheese, granulated sugar, and vanilla extract until smooth and creamy. Set aside.
Make the Cookie Dough: In a large bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
In a separate bowl, beat together melted butter, brown sugar, and granulated sugar until smooth. Add the grated carrots, vanilla extract, and egg yolks. Mix until well combined.
Gradually add the dry ingredients to the wet mixture and stir until the dough comes together.
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
Assemble the Cookies: Scoop 1 tablespoon of dough and roll into a ball. Flatten slightly and spoon about a teaspoon of cream cheese filling in the center. Top with another tablespoon of dough and seal the edges.
Place the cookies on the prepared baking sheet, spacing them about 2 inches apart.
Bake: Bake in the preheated oven for 12–15 minutes or until the edges are golden brown.
Let the cookies cool completely on a wire rack before serving.
