Ingredients

Vegetables

  • 2 cups cauliflower florets
  • 2 cups carrots, chopped
  • 1 onion, diced

Liquids & Fats

  • 1 tbsp olive oil
  • 3 cups vegetable broth
  • ½ cup milk or coconut milk

  • Salt & pepper to taste


Instructions

  1. Sauté Onion: Heat olive oil in a pot over medium heat. Add the diced onion and sauté until it becomes soft and translucent, about 5 minutes, to build the soup’s base flavor.
  2. Add Vegetables and Broth: Add the chopped carrots and cauliflower florets to the pot along with 3 cups of vegetable broth. Stir to combine all ingredients evenly.
