Ingredients

For the Burritos:

1 lb (500 g) ground beef

1 tbsp olive oil

1 small onion, diced

2 cloves garlic, minced

1 tsp chili powder

1 tsp smoked paprika

1 tsp cumin

½ tsp salt

½ tsp black pepper

½ cup salsa (your preferred heat level)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

6 large flour tortillas

½ cup sour cream

½ cup chopped lettuce

½ cup diced tomatoes

¼ cup chopped cilantro (optional)

For the Fries:

4 medium russet potatoes

2 tbsp olive oil

1 tsp garlic powder

1 tsp paprika

½ tsp salt

½ tsp black pepper

Instructions

Prep the Fries
Wash, peel (optional), and cut potatoes into even fries. Soak in cold water for 30 minutes to remove extra starch.
Dry fries, toss with olive oil, garlic powder, paprika, salt, and pepper.
Bake at 425°F (220 °C) for 25–30 minutes, flipping halfway, until golden and crispy. Alternatively, fry in batches at 375°F (190 °C).

Cook the Beef Filling
Heat oil in a skillet over medium heat. Sauté diced onion until soft, then add garlic for 1 minute.
Add ground beef and cook until browned; drain excess grease.
Stir in chili powder, smoked paprika, cumin, salt, and pepper. Add the salsa and simmer for 5 minutes.

Assemble the Burritos
Warm tortillas for flexibility.
Layer sour cream, beef mixture, cheddar and Monterey Jack cheese, lettuce, tomatoes, and cilantro onto each tortilla.
Fold sides inward, roll tightly to form burritos.

Serve
Plate burritos with fries on the side. Offer toppings like guacamole, jalapeños, or queso, and a dipping sauce for fries.

Notes

Customization: Add rice, beans, or grilled veggies to bulk up the filling.

Cheese Variations: Try Pepper Jack for extra heat or a Mexican cheese blend for creaminess.

Spicy Notes: Amp up the heat with jalapeños or hot sauce.

Reheating: Wrap burritos in foil and bake at 350°F (175 °C) for ~10 minutes to avoid sogginess.

Make-Ahead Options: Burritos freeze well—wrap individually in foil, store in freezer, reheat directly.

Storing Leftovers: Refrigerate wrapped burritos for up to 3 days; keep sauces separate for freshness.
