Description

Ingredients

2 cups mashed potatoes (prepared and cooled)

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup sour cream

1/4 cup chopped green onions

1 large egg

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup breadcrumbs (for coating)

Cooking spray or oil for greasing


Instructions

  1. Preheat your oven to 400°F. Lightly grease a baking sheet with cooking spray or oil.
  2. In a large bowl, combine the cooled mashed potatoes with cheddar cheese, Parmesan cheese, sour cream, green onions, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Using your hands, scoop about 2 tablespoons of the potato mixture and shape it into a small ball or puff shape. Place each puff onto the prepared baking sheet, spacing them out.
  4. Roll each puff in breadcrumbs to coat and then return them to the baking sheet.
