Description

Cheesy Mashed Potato Puffs are a crispy, golden snack with a creamy, cheesy interior, perfect for turning leftover mashed potatoes into a delightful appetizer, side dish, or snack.

Ingredients

2 cups mashed potatoes (leftover or freshly made)

1 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

2 large eggs

1/4 cup milk

2 green onions, chopped

Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking sheet or line it with parchment paper.
  2. In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, and chopped green onions. Stir until fully incorporated.
  3. Season with salt and pepper to taste, and mix again to evenly distribute the seasoning.
  4. Scoop out small portions of the mixture and form them into bite-sized puffs using a spoon or your hands. Place them on the prepared baking sheet, spacing them evenly.
  5. Bake for 20-25 minutes, or until the puffs are golden and crispy on the outside.
  6. Remove from the oven and let them cool slightly before serving.

Notes

  • For a spicy twist, add a pinch of cayenne pepper or finely chopped jalapeños to the mixture.
  • Fresh herbs like parsley, thyme, or rosemary can be mixed in for added flavor.
  • Use gluten-free breadcrumbs or skip them to make these puffs gluten-free.
  • For a garlicky version, add minced garlic to the mashed potatoes.
  • Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the oven or air fryer for a crispy texture.
