Ingredients
2 cups mashed potatoes (leftover or freshly made)
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2 large eggs
1/4 cup milk
2 green onions, chopped
Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking sheet or line it with parchment paper.
- In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, and chopped green onions. Stir until fully incorporated.
- Season with salt and pepper to taste, and mix again to evenly distribute the seasoning.
