Description
Cheesy Vegetable Fritters are a crispy, flavorful snack or light meal that combines fresh vegetables with the richness of cheese. Perfect for any time of day, these fritters are easy to make and customizable with your favorite ingredients.
Ingredients
1 carrot, grated
½ onion, finely chopped
½ red bell pepper, finely chopped
1 small handful of parsley (optional)
1 cup shredded cheese (mozzarella, cheddar, or your favorite)
2 eggs
1 cup all-purpose flour
Instructions
- In a large bowl, combine the grated carrot, finely chopped onion, and bell pepper.
- Add the shredded cheese to the bowl and mix everything together.
- Crack the eggs into the mixture and stir until well combined.
- Gradually add the flour and mix until the batter holds together. If it’s too runny, add a bit more flour to reach the desired consistency.
- Heat some oil in a pan over medium heat.
- Take spoonfuls of the mixture and carefully drop them into the hot oil, pressing them down slightly to form small fritters.
- Cook the fritters for 2-3 minutes on each side, or until golden and crispy.
- Remove from the pan and place them on paper towels to absorb any excess oil.
- Serve warm with your favorite dipping sauce, if desired.
Notes
- For a savory touch, add garlic powder, oregano, or rosemary to the mixture.
- For a sweet version, you can add a little cinnamon or even a drizzle of honey.
- Try different cheeses like gouda, parmesan, or feta for varied flavors.
- Use gluten-free flour for a gluten-free version of the fritters.
