Description

Ingredients

Soup Base

  • 2 cups cooked chicken, shredded
  • 1 tbsp butter
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup milk
  • Salt & pepper to taste

Dumplings

  • 1 cup flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • 2 tbsp melted butter


Instructions

  1. Sauté Vegetables: Melt butter in a pot over medium heat and sauté diced onion, chopped carrots, and chopped celery until the vegetables are soft and fragrant.
  2. Simmer Soup Base: Add the chicken broth and shredded cooked chicken to the pot. Bring to a simmer and cook for 10 minutes to meld the flavors.
  3. Prepare Dumpling Dough: In a separate bowl, mix together the flour, baking powder, and salt. Stir in the milk and melted butter until a dough forms.
  4. Add Dumplings: Drop spoonfuls of the dumpling dough carefully into the simmering soup. Make sure the soup is gently simmering to cook the dumplings properly.
  5. Cook Dumplings: Cover the pot and allow the dumplings to cook for 12–15 minutes without uncovering, until they are fluffy and cooked through.
  6. Finish & Season: Stir in the remaining cup of milk. Season the soup with salt and pepper to taste. Optionally, add fresh thyme or parsley for extra flavor. Serve hot.
