A classic Southern comfort dish featuring tender shredded chicken, sautéed vegetables, and fluffy dumplings simmered together in a rich, savory chicken broth.
Ingredients
Soup Base
- 2 cups cooked chicken, shredded
- 1 tbsp butter
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 cup milk
- Salt & pepper to taste
Dumplings
- 1 cup flour
- 1½ tsp baking powder
- ½ tsp salt
- ½ cup milk
- 2 tbsp melted butter
Instructions
- Sauté Vegetables: Melt butter in a pot over medium heat and sauté diced onion, chopped carrots, and chopped celery until the vegetables are soft and fragrant.
- Simmer Soup Base: Add the chicken broth and shredded cooked chicken to the pot. Bring to a simmer and cook for 10 minutes to meld the flavors.
- Prepare Dumpling Dough: In a separate bowl, mix together the flour, baking powder, and salt. Stir in the milk and melted butter until a dough forms.
- Add Dumplings: Drop spoonfuls of the dumpling dough carefully into the simmering soup. Make sure the soup is gently simmering to cook the dumplings properly.
- Cook Dumplings: Cover the pot and allow the dumplings to cook for 12–15 minutes without uncovering, until they are fluffy and cooked through.
- Finish & Season: Stir in the remaining cup of milk. Season the soup with salt and pepper to taste. Optionally, add fresh thyme or parsley for extra flavor. Serve hot.
