Description

Ingredients

Main Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced

  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika

Additions:

  • 4 cups chicken broth
  • 2 cups cooked chicken (shredded, rotisserie works great)
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 can (15 oz) white beans (cannellini or great northern), drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • Optional Toppings:

    • Shredded cheddar or Monterey Jack cheese
    • Sliced avocado
    • Sour cream or Greek yogurt
    • Tortilla chips or strips

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and bell pepper; sauté until softened (5 minutes).
  2. Stir in garlic, cumin, chili powder, paprika, salt, and pepper; cook 1 minute until fragrant.
  3. Pour in chicken broth, then add shredded chicken, diced tomatoes, beans, and corn. Stir to combine.
  4. Bring soup to a simmer and cook for 20–25 minutes, stirring occasionally.
  5. Stir in lime juice and fresh cilantro before serving.
  6. Ladle into bowls and top with cheese, avocado, sour cream, and tortilla chips if desired.
