Description

Chicken Pillows are an easy-to-make comfort food, featuring creamy chicken wrapped in buttery crescent rolls, topped with a seasoned breadcrumb crust. This dish is perfect for a quick family dinner or a delicious meal for a special occasion, ready in under 30 minutes.


Ingredients

2 tubes (8 oz each) original crescent rolls

2 cans (12.5 oz) canned chicken (or 2 1/2 cups cooked shredded chicken)

1 bar (8 oz) cream cheese, softened

1/4 cup sliced green onions (or more to taste)

1/2 teaspoon garlic powder

1/2 teaspoon dried parsley

For the breadcrumb topping:

1/2 cup plain breadcrumbs

1/2 teaspoon garlic powder

1/2 teaspoon dried parsley

1/2 teaspoon Italian seasoning


Instructions

  1. Preheat the oven to 375°F (190°C). Prepare a cookie sheet (12″x18″) by spraying it with cooking spray or lining it with parchment paper or tin foil.
  2. In a mixing bowl, combine the canned chicken (drained and flaked), softened cream cheese, green onions, garlic powder, and dried parsley. Stir until well combined.
  3. Open the crescent rolls and place one triangle at a time on a flat surface. Add about 2 tablespoons of the chicken mixture to the wider end of each triangle. Roll up, tucking the sides in, until the chicken is fully enclosed in the crescent roll. Place each chicken pillow on the prepared cookie sheet.
  4. In a small bowl, combine breadcrumbs, garlic powder, dried parsley, and Italian seasoning. Roll the top of each chicken pillow in the breadcrumb mixture to coat.
  5. Bake for 10-14 minutes, or until golden brown and cooked through. Serve hot.

Notes

  • For a vegetarian version, use black beans, corn, and roasted vegetables instead of chicken.
  • If you don’t have breadcrumbs, use crushed crackers or panko as substitutes for the topping.
  • For a spicy kick, add red pepper flakes or hot sauce to the chicken mixture.
  • These chicken pillows can be frozen before baking. Just freeze individually on a cookie sheet and transfer to a freezer-safe container. Bake from frozen at 375°F for 15-18 minutes.
