Description

Chocolate Chip Date Muffins combine the natural sweetness of dates with the richness of chocolate chips, creating the perfect balance of flavors in a dense, moist muffin. Whether for breakfast, a snack, or dessert, these muffins are a crowd-pleaser.


Ingredients

1 cup chopped dates

1 teaspoon baking soda

1 1/4 cup boiling water

3/4 cup butter

1 1/2 cup sugar

2 eggs

2 cups flour

1/4 teaspoon salt

1 teaspoon vanilla

1/4 cup chocolate chips

1/2 cup sugar

1/2 cup chocolate chips

1/2 cup pecans or walnuts (optional)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the chopped dates, baking soda, and boiling water. Let it cool in the refrigerator.
  3. Cream the butter and 1 1/2 cups of sugar together until light and fluffy.
  4. Add the eggs, flour, salt, and vanilla to the butter mixture and mix well.
  5. Add the cooled date mixture to the bowl and beat until everything is fully combined.
  6. Gently fold in 1/4 cup of chocolate chips.
  7. Spoon the batter evenly into muffin tins, filling each about 2/3 full.
  8. In a separate small bowl, mix together 1/2 cup of sugar, 1/2 cup of chocolate chips, and the chopped nuts (if using). Sprinkle this mixture evenly on top of the muffins.
  9. Bake for about 20 minutes, or until the tops are golden brown and the muffins spring back when lightly pressed.
  10. If making smaller muffins, fill 24 muffin cups evenly and reduce the baking time to around 15 minutes.
