Ingredients
1 cup chopped dates
1 teaspoon baking soda
1 1/4 cup boiling water
3/4 cup butter
1 1/2 cup sugar
2 eggs
2 cups flour
1/4 teaspoon salt
1 teaspoon vanilla
1/4 cup chocolate chips
1/2 cup sugar
1/2 cup chocolate chips
1/2 cup pecans or walnuts (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine the chopped dates, baking soda, and boiling water. Let it cool in the refrigerator.
- Cream the butter and 1 1/2 cups of sugar together until light and fluffy.
- Add the eggs, flour, salt, and vanilla to the butter mixture and mix well.
- Add the cooled date mixture to the bowl and beat until everything is fully combined.
- Gently fold in 1/4 cup of chocolate chips.
- Spoon the batter evenly into muffin tins, filling each about 2/3 full.
- In a separate small bowl, mix together 1/2 cup of sugar, 1/2 cup of chocolate chips, and the chopped nuts (if using). Sprinkle this mixture evenly on top of the muffins.
- Bake for about 20 minutes, or until the tops are golden brown and the muffins spring back when lightly pressed.
- If making smaller muffins, fill 24 muffin cups evenly and reduce the baking time to around 15 minutes.
