Description
A moist, tender quick bread bursting with apple chunks and swirls of cinnamon sugar. Perfect for fall mornings, holiday brunch, or an afternoon snack with coffee or tea.
Ingredients
Dry Ingredients:
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
Wet Ingredients:
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- ¼ cup brown sugar, packed
- 2 large eggs
- ½ cup sour cream (or plain Greek yogurt)
- 1 tsp vanilla extract
- 1 ½ cups apples, peeled and chopped (about 2 medium apples)
- ¼ cup chopped walnuts or pecans (optional)
- Cinnamon-Sugar Swirl: ¼ cup sugar + 1 tsp cinnamon, mixed
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment.
- Prepare Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine Wet Ingredients: In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then mix in sour cream and vanilla until smooth.
- Mix the Batter: Gently fold dry ingredients into the wet mixture until just combined. Stir in chopped apples and nuts (if using).
- Layer the Batter: Pour half the batter into the loaf pan, sprinkle half the cinnamon-sugar mixture, then top with remaining batter. Finish with the rest of the cinnamon sugar.
- Bake: Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Cool in pan for 10 minutes before transferring to a wire rack to cool completely.
