This comforting dish pairs perfectly with couscous, rice, or crusty bread, offering a delicious taste of Moroccan cuisine in a hearty main course.

Ingredients

Chicken and Seasoning

  • 1 1/2 pounds chicken thighs or drumsticks
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Cooking Base and Sauce

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup crushed tomatoes
  • 1 cup chicken broth

Spices

  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon chili flakes or cayenne pepper

Additional Ingredients

  • 1/2 cup green olives (optional)
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped parsley
  • Juice of 1/2 lemon

Instructions

  1. Heat the Oil: Warm 2 tablespoons of olive oil in a large skillet or pot over medium heat to prepare for browning the chicken.
  2. Brown the Chicken: Season the chicken thighs or drumsticks with 1 teaspoon salt and 1/2 teaspoon black pepper. Place them in the hot oil and cook until both sides are lightly golden. Remove the chicken and set aside to maintain heat.
  3. Sauté the Onion: In the same pot, add the finely chopped onion and sauté until softened, which typically takes about 5 minutes.
  4. Add Garlic: Stir in the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
  5. Add Spices: Mix in paprika, cumin, ground coriander, turmeric, cinnamon, and chili flakes. Cook briefly, about 1-2 minutes, to release their aromatic flavors without burning.
  6. Add Liquids: Pour in the crushed tomatoes and chicken broth, stirring everything together to combine the sauce components evenly.
  7. Simmer the Chicken: Return the browned chicken to the pot, submerge it in the sauce, and bring everything to a gentle simmer.
  8. Cook Covered: Cover the pot and let the chicken cook for 30 to 35 minutes, or until tender and cooked through.
  9. Finish the Sauce: Stir in the green olives (if using), lemon juice, chopped cilantro, and parsley into the sauce. Let the mixture simmer for an additional 5 minutes to blend the flavors.
  10. Serve: Remove from heat and serve hot, ideally accompanied by couscous, rice, or warm flatbread.

Notes

  • Serve with couscous, rice, or warm flatbread for a complete meal.
  • Add chickpeas to the sauce if you desire a heartier, more filling dish.
  • Adjust the amount of chili flakes or cayenne pepper to control the spice level according to preference.
