Description
A rich and creamy stroganoff featuring tender beef and savory mushrooms in a flavorful sour cream sauce, perfect for a comforting meal served over noodles, rice, or mashed potatoes.
Ingredients
Beef and Vegetables
- 1 lb beef sirloin or ground beef
- 2 cups sliced mushrooms
- 1 onion, diced
- 2 cloves garlic, minced
Sauce and Seasonings
- 1 cup beef broth
- 1 cup sour cream
- 1 tbsp Worcestershire sauce
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp butter
Optional Serving
- Egg noodles or mashed potatoes for serving
Instructions
- Sear the beef: Heat butter in a pan over medium-high heat and sear the beef until browned on all sides. Remove the beef from the pan and set aside to rest.
- Sauté onions and mushrooms: In the same pan, add diced onions and sliced mushrooms and cook until they are browned and tender, about 5–7 minutes.
- Add garlic: Stir in the minced garlic and cook for an additional minute to release its aroma.
- Prepare the sauce: Pour in the beef broth, Worcestershire sauce, paprika, salt, and pepper. Stir to combine, scraping any browned bits from the pan for extra flavor.
- Simmer with beef: Return the seared beef to the pan and allow everything to simmer gently for 5–10 minutes so the flavors meld and the beef cooks through.
- Add sour cream: Lower the heat and stir in the sour cream. Heat the mixture gently without allowing it to boil to prevent curdling, blending the sauce into a creamy consistency.
Notes
- Use Greek yogurt as a lighter alternative to sour cream for a healthier option.
- Add extra mushrooms to create a meatless variation or to increase vegetable content.
- Serve over egg noodles, rice, or cauliflower mash to suit dietary preferences and enhance the meal.
