Instructions
- Heat the olive oil: Warm the olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
- Sauté the vegetables: Add diced onion, carrots, and celery to the pot. Cook for 5–6 minutes until the veggies are softened and fragrant.
- Add garlic: Stir in the minced garlic and cook for 30 seconds to release its aroma without burning.
- Pour in chicken broth and boil: Add the chicken broth to the pot and bring the mixture to a boil, starting the soup base.
- Add main ingredients and seasonings: Stir in the cooked chicken, corn kernels, ground ginger (if using), pepper, and salt. Mix well to combine flavors.
- Simmer the soup: Reduce heat to low and let the soup simmer gently for 15–20 minutes to meld the flavors and fully cook the ingredients.
