Ingredients

Chicken

  • 2 tbsp olive oil
  • 4 chicken breasts
  • Salt & pepper, to taste
  • 1 tsp fresh thyme

Sauce

  • 2 cups cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese


Instructions

  1. Season and Sear Chicken: Pat the chicken breasts dry and season both sides with salt, pepper, and fresh thyme. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear them until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  2. Sauté Mushrooms and Garlic: In the same skillet, add the sliced mushrooms and sauté for about 5 minutes until they begin to soften and brown. Then add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Prepare the Cream Sauce: Pour in the chicken broth, heavy cream, and grated Parmesan cheese into the skillet with the mushrooms and garlic. Stir well to combine and bring the mixture to a simmer. Let it cook until the sauce thickens, approximately 5-7 minutes, stirring occasionally to prevent sticking.
  4. Return Chicken to Sauce: Nestle the seared chicken breasts back into the creamy mushroom sauce. Spoon sauce over the chicken to coat thoroughly. Continue to cook on low heat for another 5 minutes, allowing the chicken to finish cooking through and absorb the flavors.
