- Salt & pepper, to taste
- 1 tsp fresh thyme
Sauce
- 2 tbsp olive oil
- 2 cups cremini mushrooms, sliced
- 3 cloves garlic, minced
- ½ cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan
Instructions
- Season and sear chicken: Season the chicken breasts with salt, pepper, and fresh thyme. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown on both sides, about 3-4 minutes per side. Remove the chicken and set aside.
- Sauté mushrooms and garlic: In the same skillet, add the sliced cremini mushrooms and minced garlic. Cook over medium heat until the mushrooms are softened and golden, about 5-6 minutes.
- Add liquids and cheese: Pour in the chicken broth, heavy cream, and grated Parmesan cheese into the skillet with the mushrooms. Stir to combine and bring the mixture to a simmer.
- Simmer to thicken sauce: Let the sauce simmer gently for about 5-7 minutes, stirring occasionally, until it thickens and becomes creamy.
- Return chicken to skillet: Return the seared chicken breasts to the skillet, spoon the creamy mushroom sauce over them, and cook for an additional 5 minutes to ensure the chicken is cooked through and the flavors meld.
