Description

A rich, velvety mushroom sauce coats tender chicken breasts in this creamy mushroom chicken recipe, delivering a comforting and flavorful dinner that’s perfect for weeknights.

Ingredients

Chicken and Seasoning

  • 4 chicken breasts
  • Salt & pepper, to taste
  • 1 tsp fresh thyme

Sauce

  • 2 tbsp olive oil
  • 2 cups cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan

Instructions

  1. Season and sear chicken: Season the chicken breasts with salt, pepper, and fresh thyme. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown on both sides, about 3-4 minutes per side. Remove the chicken and set aside.
  2. Sauté mushrooms and garlic: In the same skillet, add the sliced cremini mushrooms and minced garlic. Cook over medium heat until the mushrooms are softened and golden, about 5-6 minutes.
  3. Add liquids and cheese: Pour in the chicken broth, heavy cream, and grated Parmesan cheese into the skillet with the mushrooms. Stir to combine and bring the mixture to a simmer.
  4. Simmer to thicken sauce: Let the sauce simmer gently for about 5-7 minutes, stirring occasionally, until it thickens and becomes creamy.
  5. Return chicken to skillet: Return the seared chicken breasts to the skillet, spoon the creamy mushroom sauce over them, and cook for an additional 5 minutes to ensure the chicken is cooked through and the flavors meld.

Notes

  • Add fresh spinach during the sauce simmering step for color and extra nutrients.
  • Use cremini mushrooms for a deep, earthy flavor; button mushrooms work as a substitute.
  • For a lighter version, substitute heavy cream with half-and-half, though sauce will be less rich.
  • Serve over mashed potatoes, rice, or pasta to soak up the creamy sauce.
