- 4 chicken breasts
- 1 tbsp olive oil
- Salt & pepper to taste
Sauce
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup cream cheese
- ½ cup parmesan cheese
- 1 cup spinach
- ½ cup chopped artichoke hearts
Instructions
- Season and sear chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat, then sear the chicken on both sides until golden brown, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
- Sauté garlic: In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Prepare the creamy sauce: Add heavy cream, cream cheese, and parmesan cheese to the skillet. Stir continuously until the cream cheese melts and the sauce is smooth and creamy.
- Add spinach and artichokes: Stir in the fresh spinach and chopped artichoke hearts into the sauce. Cook for 2-3 minutes, allowing the spinach to wilt and the artichokes to warm through.
- Simmer chicken in sauce: Return the seared chicken breasts to the skillet, nestling them into the creamy sauce. Cover and simmer on low heat for 8-10 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Serve: Spoon the creamy spinach and artichoke sauce over the chicken breasts and serve warm. Enjoy as is or with your favorite side.
