Description

Crispy Air Fryer Yellow Squash is a quick, easy, and healthy snack or side dish. The golden, crispy exterior and tender interior, combined with a tangy dipping sauce, make it irresistible. It’s the perfect way to enjoy a crunchy vegetable without deep frying.


Ingredients

2 medium yellow squashes, sliced into 1/4-inch rounds

1/2 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1/4 cup grated Parmesan cheese

1 tsp garlic powder

1/2 tsp paprika

Salt and pepper to taste

Cooking spray or olive oil spray

Fresh parsley, chopped (for garnish)

For the Dipping Sauce:

1/2 cup mayonnaise

2 tbsp ketchup

1 tsp smoked paprika or hot sauce (optional)


Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Set up three shallow bowls: one with flour, salt, and pepper; one with beaten eggs; and one with panko breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
  3. Dip each squash slice into the flour mixture, then into the egg, and finally press it into the breadcrumb mixture.
  4. Place the breaded squash slices in a single layer in the air fryer basket, lightly spraying the tops with cooking spray for extra crunch.
  5. Air fry for 8-10 minutes, flipping halfway through, until golden brown and tender.
  6. While the squash is cooking, mix together the mayonnaise, ketchup, and smoked paprika (or hot sauce) for the dipping sauce.
  7. Once the squash is done, garnish with fresh parsley and serve hot with the dipping sauce.

Notes

  • For extra heat, add a pinch of cayenne pepper or try Italian herbs in place of garlic powder and paprika.
  • For a lighter version, skip the Parmesan or use nutritional yeast.
  • For storage, refrigerate leftovers in an airtight container for up to 3 days. Reheat in the air fryer at 350°F (175°C) for 5 minutes to restore crispiness.
  • Try using zucchini or eggplant as substitutes for yellow squash, adjusting the cooking time as needed.
