Crispy Air Fryer Yellow Squash is a quick, easy, and healthy snack or side dish. The golden, crispy exterior and tender interior, combined with a tangy dipping sauce, make it irresistible. It’s the perfect way to enjoy a crunchy vegetable without deep frying.
Ingredients
2 medium yellow squashes, sliced into 1/4-inch rounds
1/2 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
1 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
Cooking spray or olive oil spray
Fresh parsley, chopped (for garnish)
For the Dipping Sauce:
1/2 cup mayonnaise
2 tbsp ketchup
1 tsp smoked paprika or hot sauce (optional)
Instructions
- Preheat your air fryer to 400°F (200°C).
- Set up three shallow bowls: one with flour, salt, and pepper; one with beaten eggs; and one with panko breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
- Dip each squash slice into the flour mixture, then into the egg, and finally press it into the breadcrumb mixture.
- Place the breaded squash slices in a single layer in the air fryer basket, lightly spraying the tops with cooking spray for extra crunch.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown and tender.
- While the squash is cooking, mix together the mayonnaise, ketchup, and smoked paprika (or hot sauce) for the dipping sauce.
- Once the squash is done, garnish with fresh parsley and serve hot with the dipping sauce.
Notes
- For extra heat, add a pinch of cayenne pepper or try Italian herbs in place of garlic powder and paprika.
- For a lighter version, skip the Parmesan or use nutritional yeast.
- For storage, refrigerate leftovers in an airtight container for up to 3 days. Reheat in the air fryer at 350°F (175°C) for 5 minutes to restore crispiness.
- Try using zucchini or eggplant as substitutes for yellow squash, adjusting the cooking time as needed.
