Ingredients
1 cup cottage cheese
2 eggs
1/4 cup all-purpose flour (plus more if needed)
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper, to taste
1/2 cup all-purpose flour (for breading)
2 eggs, beaten (for breading)
1 cup breadcrumbs
Oil for frying (canola or vegetable)
Instructions
In a mixing bowl, combine cottage cheese, eggs, 1/4 cup flour, Parmesan, garlic powder, onion powder, salt, and pepper. Mix until thick; add extra flour if needed.
Scoop into bite-sized balls or patties and place on a parchment-lined tray.
Refrigerate for 20 minutes to firm up.
Set up a breading station: one bowl with flour, one with beaten eggs, and one with breadcrumbs.
Coat each chilled ball in flour, dip in egg, then roll in breadcrumbs.
Heat oil in a deep skillet over medium heat. Fry each piece for 2–3 minutes per side until golden.
Transfer to a paper towel-lined plate to drain.
Serve hot with dipping sauces like marinara, ranch, or spicy mayo.
