Description

Crispy Red Potato Wedges are a savory side dish featuring crispy, golden exteriors and soft, fluffy interiors. With a blend of simple spices and fresh parsley, these wedges are a perfect complement to any meal, easy to make, and full of flavor.

Ingredients

2 pounds red potatoes

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon dried oregano

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional for heat)

Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Wash and scrub the red potatoes thoroughly. Cut each potato into wedges, aiming for about eight wedges per potato.
  3. In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, oregano, salt, black pepper, and cayenne pepper (if using).
  4. Add the potato wedges to the bowl and toss until they are evenly coated with the seasoning mixture.
  5. Spread the seasoned potato wedges in a single layer on the baking sheet.
  6. Bake for 30-35 minutes, flipping the wedges halfway through, until they are golden brown and crispy.
  7. Remove from the oven and let them cool for a few minutes. Garnish with chopped fresh parsley before serving.

Notes

  • For extra flavor, add fresh rosemary or thyme to the seasoning mix.
  • For a spicier version, swap the cayenne pepper with a bit of chili powder or Cajun seasoning.
  • To make these wedges cheesy, sprinkle grated Parmesan cheese over them during the last few minutes of baking.
  • For a healthier alternative, try swapping regular potatoes with sweet potatoes.
