Description

These crock pot pineapple meatballs are juicy, tender, and simmered in a sweet-and-sour pineapple sauce. Perfect for parties, potlucks, or served over rice for a quick family meal!


Ingredients

Frozen Meatballs:

  • 2 lbs frozen fully cooked meatballs (or homemade)

Pineapple Sauce:

  • 1 can (20 oz) pineapple chunks in juice (reserve juice)
  • 1 cup BBQ sauce (or ketchup for a sweeter version)
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 2 tablespoons rice vinegar (or apple cider vinegar)

Vegetables:

  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced

Optional Garnish:

  • sesame seeds, sliced green onions

Instructions

  1. Mix Sauce: In a medium bowl, whisk together pineapple juice (from can), BBQ sauce, brown sugar, soy sauce, and vinegar.
  2. Combine Ingredients: Add meatballs, pineapple chunks, bell peppers, and onion to a crock pot.
  3. Add Sauce: Pour sauce over everything and stir to coat.
  4. Cook: Cover and cook on Low for 4–6 hours or High for 2–3 hours, until heated through and sauce is thickened.
  5. Garnish and Serve: Garnish with sesame seeds and green onions before serving.
