1/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
2/3 cup milk
2 large eggs
1 teaspoon vanilla extract
2 tablespoons melted butter
1 1/2 cups peeled and diced fresh peaches
Oil for frying
For the Glaze:
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
Instructions
- In a large mixing bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, mix milk, eggs, vanilla, and melted butter until well combined.
- Add the wet ingredients to the dry ingredients and stir just until combined — don’t overmix.
- Gently fold in the diced fresh peaches.
- Heat oil in a deep skillet or fryer to 350°F (175°C).
- Drop spoonfuls of batter into the hot oil, a few at a time. Don’t overcrowd the pan.
- Fry until golden brown and cooked through, about 2-3 minutes per side.
- Remove fritters with a slotted spoon and drain on paper towels.
- For the glaze, whisk powdered sugar, milk, and vanilla until smooth.
- Drizzle or dip warm fritters in glaze and let set slightly before serving.
Notes
- Baked Option: For a healthier version, bake the fritters at 375°F for 12-15 minutes, flipping halfway through.
- Gluten-Free: Use a gluten-free flour blend for those with dietary restrictions.
- Chocolate Drizzle: Try a chocolate glaze instead of vanilla for a fun twist.
- Storage: Store leftover fritters in an airtight container at room temperature for up to 2 days, or in the fridge for up to 4 days.
- Freezing: Freeze fritters after frying, then reheat in the oven to restore crispiness.
