Description

Dirty Rice with Ground Beef is a hearty, flavorful dish combining seasoned ground beef, rice, and vegetables in a savory sauce, perfect for any night of the week.

Ingredients

1 tablespoon olive oil

1 pound ground beef

1 small onion, finely diced

1 green or red bell pepper, diced

1 cup long-grain white rice

1 (14.5 ounce) can diced tomatoes, undrained

1 (10.75 ounce) can condensed chicken broth

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon Cajun seasoning (optional)

1/4 cup chopped fresh parsley (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess grease.
  2. Add the diced onion and bell pepper to the pot. Cook for about 5 minutes, or until softened.
  3. Stir in the rice, diced tomatoes (undrained), chicken broth, salt, pepper, and Cajun seasoning (if using). Bring to a boil.
  4. Once boiling, reduce heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid has been absorbed.
  5. Stir in the chopped fresh parsley (if using) before serving.

Notes

  • For added heat, add cayenne pepper or chopped jalapeƱo with the onions and bell peppers.
  • To make a vegetarian version, swap out ground beef for plant-based crumbles or lentils.
  • Feel free to add more vegetables like corn, peas, or celery.
  • For extra flavor, try adding thyme, oregano, or a bay leaf to the seasoning.
  • Leftovers can be stored for up to 3 days in the fridge.
  • This dish can be frozen for up to 3 months. Let it cool completely before storing.
