Ingredients
1 ½ cups all-purpose flour
½ cup unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 large eggs
1 cup granulated sugar
½ cup milk
½ cup avocado oil
2 teaspoons vanilla extract
1 ½ cups grated zucchini, squeezed and liquid drained
1 ½ cups chocolate chips
Instructions
- Preheat the oven: Set your oven to 375°F (190°C) and line a muffin tin with paper liners.
- Mix dry ingredients: In a small bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
- Mix wet ingredients: In a large bowl, whisk the eggs and granulated sugar until smooth. Add the milk, avocado oil, and vanilla extract, and whisk to combine.
- Combine dry and wet ingredients: Gradually stir the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
- Add zucchini and chocolate chips: Stir in the grated zucchini (making sure to drain any liquid) and fold in the chocolate chips until evenly distributed.
- Fill muffin tin: Spoon the batter into the muffin liners, filling each about ¾ of the way full.
- Bake: Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the muffins to cool in the tin for about 10 minutes before transferring them to a wire rack to cool completely for another 10 minutes.
