Ingredients
Beef and Cooking Base
- 2 pounds beef stew meat
- 2 tablespoons oil
Vegetables
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 3 cloves garlic, minced
Liquids and Seasoning
- 1 cup Guinness or stout beer
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Brown the Beef: Heat oil in a Dutch oven or skillet over medium-high heat. Add the beef stew meat and brown on all sides to lock in flavor. Once browned, remove the beef and set aside.
- Sauté Vegetables: In the same pot, add the chopped onion, sliced carrots, diced potatoes, and minced garlic. Cook for about 5 minutes until the vegetables begin to soften and the onions turn translucent.
- Add Liquids and Seasonings: Pour in the beef broth and Guinness beer, then stir in tomato paste, thyme, and bay leaf. Season with salt and pepper according to your taste.
- Combine and Simmer: Return the browned beef to the pot, stir to combine all ingredients. If using a Dutch oven, bring the stew to a simmer, cover, and let it cook gently for 2 hours until the meat is tender. If using a slow cooker, transfer everything to the slow cooker and cook on low for 6 to 8 hours.
- Finish and Serve: Remove the bay leaf before serving. Ladle the stew into bowls and enjoy it warm, optionally garnished with fresh herbs or a side of crusty bread.

- You can add peas or celery for extra vegetables and texture if desired.
- The stew’s flavor develops even more when allowed to rest overnight, making leftovers especially delicious.
