Description

These easy chocolate brownies are rich, fudgy, and melt-in-your-mouth delicious. Perfect for any occasion, they are a crowd favorite and highly customizable.


Ingredients

225g (1 cup) butter

225g (1 cup) dark chocolate

225g (1 cup) caster sugar

3 large eggs

60g (½ cup) plain flour

45g (¼ cup) cocoa powder


Instructions

  1. Preheat the oven to 160ºC fan (325ºF). Line a 9×9 inch (23cm) metal baking pan with nonstick baking paper.
  2. Melt the butter and dark chocolate together, either over a simmering pan of water or in the microwave at 30-second intervals, stirring after each interval.
  3. In a medium mixing bowl, whisk the eggs and sugar on high until the mixture becomes pale and fluffy (about 5 minutes).
  4. Once the chocolate and butter mixture is slightly cooled, pour it into the egg mixture. Gently fold them together using a hand whisk.
  5. Sift the cocoa powder and flour into the bowl and gently fold them into the wet mixture until just combined. Avoid overmixing.
  6. Pour the brownie batter into the prepared baking pan and spread it evenly.
  7. Bake for 18-20 minutes. The top should be shiny and crackly, and the inside should still be soft and fudgy. Cool for at least 1 hour before slicing.

Notes

  • For extra flavor, add a pinch of sea salt, chocolate chunks, or a bit of cinnamon to the batter.
  • Store brownies in an airtight container at room temperature for up to 3 days.
  • To freeze, wrap brownies tightly in plastic wrap or use a freezer-safe bag for up to 3 months. Thaw at room temperature before serving.
