Ingredients
225g (1 cup) butter
225g (1 cup) dark chocolate
225g (1 cup) caster sugar
3 large eggs
60g (½ cup) plain flour
45g (¼ cup) cocoa powder
Instructions
- Preheat the oven to 160ºC fan (325ºF). Line a 9×9 inch (23cm) metal baking pan with nonstick baking paper.
- Melt the butter and dark chocolate together, either over a simmering pan of water or in the microwave at 30-second intervals, stirring after each interval.
- In a medium mixing bowl, whisk the eggs and sugar on high until the mixture becomes pale and fluffy (about 5 minutes).
- Once the chocolate and butter mixture is slightly cooled, pour it into the egg mixture. Gently fold them together using a hand whisk.
- Sift the cocoa powder and flour into the bowl and gently fold them into the wet mixture until just combined. Avoid overmixing.
- Pour the brownie batter into the prepared baking pan and spread it evenly.
- Bake for 18-20 minutes. The top should be shiny and crackly, and the inside should still be soft and fudgy. Cool for at least 1 hour before slicing.
Notes
- For extra flavor, add a pinch of sea salt, chocolate chunks, or a bit of cinnamon to the batter.
- Store brownies in an airtight container at room temperature for up to 3 days.
- To freeze, wrap brownies tightly in plastic wrap or use a freezer-safe bag for up to 3 months. Thaw at room temperature before serving.
