Description

This Easy Homemade One Bowl Chocolate Chip Banana Bread is a moist, flavorful treat packed with ripe bananas and rich chocolate chunks. It’s simple to make and perfect for breakfast, dessert, or a snack.


Ingredients

70 g (¼ cup) butter, melted and cooled

2 tablespoons vegetable oil

100 g (¾ cup) caster sugar

100 g (½ cup) brown sugar

2 eggs

1 teaspoon vanilla extract

3 very ripe bananas, divided

65 g (⅓ cup) full-fat Greek yogurt

360 g (2 ¾ cups) flour, sifted

1 ½ teaspoons bicarbonate of soda

½ teaspoon salt

200 g (7 oz) chocolate chips or chunks, divided (reserve 2 tablespoons for topping)


Instructions

  1. Preheat your oven to 180°C (356°F). Grease and line a 2lb loaf tin.
  2. In a small saucepan, melt the butter over medium heat. Once melted, set it aside to cool.
  3. In a medium mixing bowl, combine vegetable oil, caster sugar, brown sugar, and eggs. Break 2 of the bananas into chunks and add them to the mixture, followed by the melted butter and Greek yogurt. Mix everything well using a fork or wooden spoon.
  4. Sift the flour directly into the bowl and stir in the bicarbonate of soda and salt. Mix until just combined.
  5. Fold in the chocolate chips or chunks, reserving 2 tablespoons for sprinkling on top.
  6. Pour the batter into the prepared loaf tin. Slice the remaining banana lengthwise and place it on top of the batter. Sprinkle with the reserved chocolate chips.
  7. Bake for about 40 minutes, or until a skewer inserted into the center comes out with only a few moist crumbs.
  8. Allow the bread to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For dairy-free, use dairy-free yogurt and butter substitutes.
  • For extra texture, add chopped walnuts or pecans.
  • To make it spiced, add 1 teaspoon of cinnamon and a pinch of nutmeg.
