Description

Easy Instant Pot Beef and Broccoli is a quick, flavorful dinner featuring tender beef and crisp broccoli in a savory garlic-soy sauce. This takeout-style favorite is perfect for busy weeknights, made effortlessly in the Instant Pot and served over rice or noodles.

Ingredients

Beef and Seasoning

  • 1 1/2 pounds flank steak or sirloin, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Sauce

  • 1 cup beef broth
  • 1/2 cup soy sauce (or gluten-free soy sauce)
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced (or 1/2 teaspoon ground ginger)
  • 1 tablespoon sesame oil

Vegetables and Thickener

  • 4 cups broccoli florets
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Instructions

  1. Prepare the Instant Pot: Set the Instant Pot to the Sauté function and add the olive oil, heating it up for browning the beef.
  2. Brown the beef: Season the sliced flank steak or sirloin with salt and black pepper, then add the beef to the pot. Brown it lightly on all sides to develop flavor.
  3. Add sauce ingredients: Pour in the beef broth, soy sauce, brown sugar, minced garlic, ginger, and drizzle sesame oil. Stir well to combine all the flavors.
  4. Pressure cook: Secure the Instant Pot lid and set the valve to Sealing. Cook on High Pressure for 10 minutes to tenderize the beef and infuse the sauce.
  5. Release pressure: Carefully perform a quick pressure release to safely open the pot.
  6. Add broccoli: Add the broccoli florets to the pot with the cooked beef and sauce.
  7. Sauté broccoli: Set the Instant Pot back to Sauté mode and cook the mixture for 3 to 5 minutes until the broccoli is tender-crisp.
  8. Thicken sauce: Mix cornstarch and cold water to create a slurry. Stir this into the pot and simmer for 1 to 2 minutes until the sauce thickens.
  9. Serve: Once thickened, serve the beef and broccoli hot over rice or noodles.

Notes

  • Slice beef thinly against the grain for maximum tenderness.
  • For an extra kick, add red pepper flakes to the sauce.
  • Note that the sauce will thicken more as it cools, so serve immediately for best texture.
