Ingredients

2 lbs beef stew meat, cubed

2 tablespoons vegetable oil

1 large onion, chopped

2 tablespoons red curry paste

1 tablespoon curry powder

1 teaspoon ground cumin

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 (13.5 oz) can full-fat coconut milk

½ cup beef broth


Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat. Add the cubed beef stew meat and brown it on all sides, about 5-7 minutes.
  2. Transfer the browned beef to the slow cooker.
  3. In the same skillet, add the chopped onion, garlic, and grated ginger. Sauté for 3-4 minutes until softened and fragrant.
