Description

Flaky Honey Brioche Bread is a soft, slightly sweet bread enriched with honey and butter, perfect for breakfast, snacks, or as a side. Topped with a honey butter glaze, it’s a delightful treat for any occasion.

Ingredients

For the Dough:

1/2 cup warm milk (110°F, whole milk recommended)

2 1/4 tsp active dry yeast (1 packet)

1/4 cup honey

4 large eggs (room temperature, divided)

3 1/2 cups all-purpose flour (plus extra for dusting)

1 tsp salt

1/2 cup unsalted butter (softened, cut into small cubes)

For the Honey Butter Glaze:

2 tbsp unsalted butter (melted)

1 tbsp honey

1 egg yolk (for egg wash)

Instructions

  1. Activate the Yeast: In a large bowl, combine the warm milk, yeast, and honey. Stir gently and let sit for about 5 minutes, until frothy.
  2. Prepare the Dough: Add eggs (save one for the egg wash) and salt to the yeast mixture. Gradually add flour, one cup at a time, until the dough starts to come together. Knead for about 8-10 minutes until smooth and elastic.
  3. Incorporate the Butter: Add softened butter cubes and knead until fully incorporated and the dough is soft and smooth.
  4. First Rise: Place dough in a lightly greased bowl, cover with a cloth, and let rise for 1-2 hours or until doubled in size.
  5. Shape the Brioche: Punch down the dough and divide into 4 portions. Shape each into a ball and arrange in a greased 9×9-inch baking pan.
  6. Second Rise: Cover the pan and let the dough rise for 30-45 minutes until puffed up.
  7. Bake the Brioche: Preheat oven to 350°F (175°C). Brush dough with egg yolk for egg wash. Bake for 35-40 minutes, or until golden brown and the bread sounds hollow when tapped on the bottom.
  8. Prepare the Honey Butter Glaze: While baking, melt butter and honey together in a small saucepan. Once the bread is finished baking, brush with the glaze.
  9. Serve: Let the brioche cool for 10 minutes before serving, either warm or at room temperature.

Notes

  • Add cinnamon to the dough for a spiced brioche version.
  • Mix dried fruits like raisins, cranberries, or apricots into the dough for a fruity twist.
  • For a decadent treat, fold chocolate chips or chunks into the dough.
  • Store leftover brioche in an airtight container for up to 2-3 days or freeze for up to 3 months.
  • Reheat by wrapping in foil and warming at 350°F for 10 minutes or microwaving for 20-30 seconds.
