Ingredients

1/2 cup warm milk (110°F, whole milk recommended)
2 1/4 tsp active dry yeast (1 packet)
1/4 cup honey
4 large eggs (room temperature, divided)
3 1/2 cups all-purpose flour (plus extra for dusting)
1 tsp salt
1/2 cup unsalted butter (softened, cut into small cubes)
For the Honey Butter Glaze:
2 tbsp unsalted butter (melted)
1 tbsp honey
1 egg yolk (for egg wash)
Instructions
- Activate the Yeast: In a large bowl, combine the warm milk, yeast, and honey. Stir gently and let sit for about 5 minutes, until frothy.
- Prepare the Dough: Add eggs (save one for the egg wash) and salt to the yeast mixture. Gradually add flour, one cup at a time, until the dough starts to come together. Knead for about 8-10 minutes until smooth and elastic.
- Incorporate the Butter: Add softened butter cubes and knead until fully incorporated and the dough is soft and smooth.
- First Rise: Place dough in a lightly greased bowl, cover with a cloth, and let rise for 1-2 hours or until doubled in size.
- Shape the Brioche: Punch down the dough and divide into 4 portions. Shape each into a ball and arrange in a greased 9×9-inch baking pan.
- Second Rise: Cover the pan and let the dough rise for 30-45 minutes until puffed up.
- Bake the Brioche: Preheat oven to 350°F (175°C). Brush dough with egg yolk for egg wash. Bake for 35-40 minutes, or until golden brown and the bread sounds hollow when tapped on the bottom.
- Prepare the Honey Butter Glaze: While baking, melt butter and honey together in a small saucepan. Once the bread is finished baking, brush with the glaze.
- Serve: Let the brioche cool for 10 minutes before serving, either warm or at room temperature.
