Description

A delicious twist on classic Chinese char siu featuring juicy boneless chicken thighs coated in a sweet, savory, and slightly smoky glaze, baked to perfection with a caramelized finish.

Ingredients

Chicken

  • 500 g boneless chicken thighs

Marinade

  • 3 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon five-spice powder
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger

Instructions

  1. Prepare the Marinade: In a bowl, combine hoisin sauce, soy sauce, honey, oyster sauce, rice vinegar, five-spice powder, minced garlic, and grated ginger. Mix thoroughly to create a smooth marinade.
  2. Marinate the Chicken: Add the boneless chicken thighs to the marinade, ensuring each piece is well coated. Cover and let it marinate for at least 1 hour or preferably overnight in the refrigerator to enhance flavor and tenderness.
  3. Preheat the Oven: Set your oven to 200°C (400°F) and allow it to fully preheat for even cooking.
  4. Arrange Chicken for Baking: Place the marinated chicken thighs on a baking tray lined with parchment paper or a silicone baking mat to prevent sticking and facilitate easy cleanup.
  5. Bake the Chicken: Bake the chicken in the preheated oven for 25 to 30 minutes. Halfway through the cooking time, baste the chicken with the leftover marinade to keep it juicy and intensify the glaze flavor.
  6. Caramelize the Glaze: Switch the oven to broil mode and broil the chicken for a few minutes until the glaze caramelizes and develops a slightly charred, glossy finish. Watch closely to avoid burning.
  7. Serve: Remove from the oven, let the chicken rest for a few minutes, then slice and serve hot for a flavorful main course.

Notes

  • Chicken thighs stay juicier and more flavorful than chicken breast for this recipe.
  • For an extra smoky char, you can grill the marinated chicken instead of baking.
  • Ensure to baste midway to maintain moisture and enhance the glaze’s intensity.
  • Marinating overnight will yield deeper flavor penetration.
