Description

Football cookies are soft, chocolaty cut-out sugar cookies shaped like footballs and topped with rich chocolate icing and white chocolate laces. Perfect for game days, tailgates, or football-themed parties, these cookies are fun, festive, and easy to make.


Ingredients

2 cups all-purpose flour

¾ cup Dutch-process cocoa powder

2 teaspoons baking powder

¾ teaspoon salt

1 cup unsalted butter, room temperature

1 ½ cups confectioners’ sugar

1 large egg, room temperature

2 teaspoons pure vanilla extract

3 cups confectioners’ sugar (for icing)

45 tablespoons hot water (for icing)

¾ cup bittersweet chocolate chips (for icing)

½ teaspoon vanilla (for icing)

2 tablespoons light corn syrup (for icing)

White chocolate wafers (for laces)


Instructions

  1. Preheat the oven to 400°F and line baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat together the butter and confectioners’ sugar until light and fluffy (about 1-2 minutes). Add in the egg and vanilla extract, and mix until fully incorporated.
  4. Gradually add the dry ingredients into the wet mixture and mix until combined. The dough should be slightly soft but not sticky.
  5. Roll the dough out on a floured surface to about 1/4-inch thickness. Use a football-shaped cookie cutter to cut out cookies. Place them on the prepared baking sheets.
  6. Bake the cookies for 7-8 minutes, rotating the sheet halfway through. Allow them to cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
  7. For the icing, melt the chocolate chips over a double boiler or in the microwave. In a separate saucepan, bring the corn syrup and water to a boil, then remove from heat. Stir in the melted chocolate, confectioners’ sugar, and vanilla.
  8. Spread the icing on the cooled cookies using an offset spatula. Let the icing set for about an hour.
  9. Melt the white chocolate wafers in the microwave at 50% power, stirring every 15 seconds. Transfer the melted white chocolate to a piping bag and pipe the football laces onto the cookies. Allow the white chocolate to set before serving.

Notes

  • If you prefer, skip the chocolate icing and just drizzle white chocolate for the laces.
  • For a fun twist, spread chocolate buttercream between two cookies to make cookie sandwiches.
  • Add some extra texture and flavor by sprinkling chocolate sprinkles or brown sanding sugar onto the wet icing before it sets.
