Ingredients
1 cup long-grain white rice
- 2 tbsp unsalted butter
- 1 medium yellow onion, thinly sliced
- 2 cups beef broth (or chicken broth)
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme
- 1/4 cup grated Parmesan cheese (optional)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Caramelize the Onions: In a medium saucepan, melt the butter over medium heat. Add the sliced onions and a pinch of salt. Cook until golden brown and caramelized, about 15 minutes.
- Toast the Rice: Add the rice to the saucepan with the onions and stir to coat in butter. Cook for 2-3 minutes until slightly toasted.
- Simmer: Pour in the broth, garlic powder, and thyme. Bring to a boil, then simmer covered for 18-20 minutes until rice is tender and liquid is absorbed.
