Instructions

  1. Preheat oven: to 375°F (190°C).
  2. Whisk eggs: In a bowl, whisk eggs, milk, salt, and pepper until well combined. Set aside.
  3. Cook potatoes: Heat olive oil in an oven-safe skillet over medium heat. Add diced potatoes and cook until golden and tender, about 8–10 minutes.
  4. Add ingredients: Stir in onion and bell pepper, cooking until softened. Add diced ham and cook 2–3 minutes more.
