Instructions
- Preheat oven: to 375°F (190°C).
- Whisk eggs: In a bowl, whisk eggs, milk, salt, and pepper until well combined. Set aside.
- Cook potatoes: Heat olive oil in an oven-safe skillet over medium heat. Add diced potatoes and cook until golden and tender, about 8–10 minutes.
- Add ingredients: Stir in onion and bell pepper, cooking until softened. Add diced ham and cook 2–3 minutes more.
- Pour egg mixture: Pour egg mixture evenly over the potato-ham mixture. Reduce heat to low, and cook without stirring until edges start to set, about 5 minutes.
- Add cheese and bake: Sprinkle cheese on top. Transfer skillet to oven and bake 10–12 minutes, or until center is just set.
- Serve: Remove, let cool slightly, and garnish with fresh parsley. Slice into wedges and serve warm.
